TASTING LIFE
I
have wonderful news... I met a wonderful guy! And the part you'll
like..... I
met him when he attended one of our meetings of the divorce support
group I'm
involved with. I was the facilitator for that meeting and I had
decided that
I was going to focus on boundaries. I pulled out all the stuff you and
I had
worked on together and formulated it to work with my group. The group
absolutely loved it! After the meeting Mark came up to me and we
chatted for
a bit (later he would tell me how he needed the reminder about
boundaries and
many of the things I said touched his heart). So after that we would
see each
other in our group's social gatherings. Then he eventually asked for
my phone
number. We've been officially dating for only a week but its been
wonderful
so far! We have soooo much in common. And he's a very sweet, gentle
understanding person. So I think you somehow had a bit of a hand in
this!

RECIPE OF THE MONTH
Celebrate
spring with a fresh look at the seasons fruits and veggies! So
much of
what we enjoy about spring has to do with newness of all that it
brings
not the least is new fruits and veggies in
season.
The
return of asparagus is a sure sign of spring. It is low cal and great
served
hot or cold. Strawberries are naturally sweet, delicious and rich in
vitamin
C. My family eagerly awaits both of these. This recipe is a perfect
combination of these two spring favorites.
LINDA BEDUHNS SRINGTIME
SALAD
Linda
is one of the eight members of my girls' dinner club. She brought this
salad
to dinner club one month. Linda is a mother of 3, a volunteer at
school, an avid
runner, and a jewelry designer. Linda has raised funds for
health-related
causes through her running and her jewelry business. Check out her

Dressing:
π cup lemon juice
2 Tbsp. olive oil
2 Tbsp. honey
Salad:
2 cups asparagus, cut into 1 pieces
2 cups strawberries, sliced
Combine
salad ingredients. Partially cook asparagus in boiling water for 3
5
minutes or until tender-crisp. Drain and rinse with cold water. In
large
bowl, mix strawberries, asparagus and dressing. Toss lightly. Serves
4! For

Iceland~~
Yes!! With persistence I found an Iceland Air package deal which made
Iceland
affordable. Dream trip?? Right
well not exactly. Picture this ~~
a 6
hour flight with an intention to sleep because you know you will land
at 6 am
in Iceland and 5 hours later will be at www.bluelagoon.com . My
expectation
was to have a restful and sleep filled 6 hour flight! In my row, a
darling
little 5 or 6 year old vomited so many times she used 3 air sickness
bags.
Her mom who didnt speak English sat between us (thankfully!)
Just as
the flight attendance handed me my dinner, tomato juice and water
mom started saying, bathroom, bathroom!
What to
do with a lapful of food? A beautiful flight attendant came to my
rescue. She
held my tray while I stood in the aisle waiting for my seat
mates to return from the bathroom.
Another
fun part of the trip was the small baby who sat kiddie
corner
from me and behind Gary who we think cried 30 minutes of every hour. I
sleepwalked off the plane. No problem, I was in Iceland my dream trip
to
celebrate my 50th birthday. The Blue Lagoon (click here for pics)
exceeded
my expectations and I felt like I had a taste of heaven as I floated
on my
back in 110¡ F water with steam rising all around me. Speaking of
being
warm..the only time I was not cold was when I was in the Blue Lagoon.
We
spent one day in the cold, relentless rain trying to find the tourist
center.
We never found it. We simply got too cold and wet and just gave up
trying to
find it.
One
last Iceland experience ~ I tried Hakarl which is putrid shark meat
that is
buried in the ground for 6 months. It smelled like strong ammonia and
tasted
like rubbery blue cheese. I thought I was on Fear Factor
as I
mustered up the courage to even try it. I had a huge stomach ache that
evening which Gary attributed to the hakarl. The smell was so bad no
other
tourist would even consider trying it. In fact, they all backed away
when the
jar containing hakarl was opened.
A
baby crying for six hours, a child vomiting next to me on the plane
ride,
being cold, walking in the rain, getting a huge stomach ache..good
trip you
ask? Absolutely. Even on vacation I remember that the only simply
perfect no
stress environment is my grave. I would rather have a few challenges
than the
other option of being six feet under. Every day is a new possibility
because
I wake up to a new day that I havent lived before.
